Zucchini Waffles
Our garden has had a zucchini explosion! We have desperately been looking for ways to cook it before it goes bad, but the pile on the kitchen counter keeps growing despite eating it in about two out of three meals a day. So, now, it is experiment time. I made Zucchini Waffles this morning and they were pretty dang good. Here is what I did:
Zucchini Waffles
2 Eggs
1 3/4 Cup Milk (We use Almond Milk)
1/2 Cup Oil
1 Cup Grated Zucchini
2 Cups Flour
4 Tablespoons Baking Powder
1 Tablespoon Sugar
1/2 Teaspoon Salt
1 Teaspoon Cinnamon
Heat the waffle iron, whisk eggs until slightly fluffy, then whisk in remaining ingredients (wet then dry).

Mopsie Dopsie
My daughter Izzy, like her Dad, enjoys drawing funny stuff all the time. The other day she came up with her first real completely imagined fictional characters: Mopsie Dopsie and her husband/prince, Popsie Dopsie. Art, creativity and imagination are some of the most important attributes I want to instill in my children, therefore making your first fiction story people is a pretty big deal around here. I thought they were hilarious so we are coming up with some story ideas together. Here are some samples:

Squash
The garden gave up its first goods a couple of days ago, and now good reader, standby as I dazzle and amaze my family members with words....The squash was delicious! It is absolutely true (Mom) our tastebuds actually do change as we get older. The dry-heaving ten year old version of me at the dinner table next to a kitchen timer ticking down to a swift paddling, would never have believed that I would one day willingly consume the "Devil's Vegetable."

New Digs
Following a great prison riot yesterday, in which my fluffy feathered inmates made several successful attempts to breach the outer wall of their penitentiary, I decided it was time to beef up security. I slapped together this maximum security facility this morning with the hope of quelling any future uprisings. So far so good. The juvenile delinquents appear happier and more content to live out the remainder of their indoor sentences in peace. Granted, the old metal wash tub facility, seen above, was becoming somewhat of a ghetto, and the chickens seemed to be forming some types of opposing factions. They were only a few tight white t-shirts with the sleeves rolled slightly up, snapping fingers, and catchy harmonies away from full scale inner-city gang warfare.
*Note: The dark colored matter in the top picture is not poo, in case you were bringing the hygiene of our prison system into question. It is homemade pine and leaf mulch peaking out from under the store bought shavings, so relax you liberal chicken rights whack-job.

On The Way!
My fifteen new babies are on the way! I ordered a big batch of baby Rhode Island Red chickens, which I will divide up with my mother - some city chicks and some country chicks. I guess we can see which group has better manners and work ethics versus a propensity toward drugs, gangs and violence.
